Buttered Pearl Onions

These oh-so satisfying buttery bites (aka pearl onions) are the perfect addition to any meat-heavy meal spread. This pearl onion recipe comes together in about 10 minutes, and they’re sure to make for an unforgettable side dish.

Buttered Pearl Onions
Start to finish: 15 minutes
Makes: 1 pound pearl onions

Ingredients
1 pound pearl onions (preferably white)
4 tablespoons salted butter Kosher salt, to taste
Fresh thyme, to serve (optional)

Method
Bring a large pot of water to a boil. Drop in pearl onions, skins and all, and boil 3 minutes. Drain and immediately dunk in a bowl of ice water for 1 minute. Drain again. Cut each onion at the root end and gently squeeze from the top. The onion should pop right out of its skin. Place onions in a bowl until every onion has been peeled.

Set a skillet over medium-high heat and add butter. Once the butter has melted, add peeled onions and a pinch of kosher salt, stirring to coat. Cook onions 2 minutes, or until tender and buttery. Remove from heat and sprinkle with fresh thyme, if desired.

Notes: Sprinkle a handful of buttered pearl onions over each serving of beef Burgundy stew for a delightfully sweet, buttery bite.
