Greek Yogurt Black Bean Dip

Ingredients
1 15-ounce can black beans, drained and rinsed
½ cup plain Greek yogurt, or one 5.3-ounce container
2–3 cloves garlic
1 small lime, juiced
½ teaspoon ground cumin
¼ teaspoon ground chipotle or chili powder
¼ teaspoon smoked paprika
¼ teaspoon kosher salt
Cotija cheese
Fresh cilantro, for serving
Tortilla chips, for serving
Assorted vegetables, sliced (baby carrots, celery, bell peppers), for serving 

Method
Fully drain and rinse the black beans, and then pat dry to remove as much remaining moisture as possible.

Add to the bowl of a food processor or blender. Add all the remaining ingredients, and pulse to combine. Use a soft spatula to scrape down the sides if needed. Blend for another 30–45 seconds, or until the consistency is smooth and creamy.

Transfer the black bean dip to a serving bowl and garnish with fresh cilantro, cotija cheese and additional seasonings, if desired. Serve with tortilla chips or sliced vegetables.
