Ham and Havarti Croissant With Blueberry-Thyme Compote

Ingredients
For the compote:
2 cups fresh or frozen blueberries
3 tablespoons water
2 tablespoons lemon juice
¼ cup sugar
2 sprigs fresh thyme

For the sandwich:
4 fresh croissants, sliced
4 tablespoons butter, softened
8 ounces sliced ham lunchmeat
8 slices havarti cheese

Method
For the compote:
In a small saucepan over medium heat, combine all ingredients with a wooden spoon. Let simmer 15–20 minutes, stirring consistently until the consistency coats the back of a spoon.

Remove thyme sprigs and let compote cool slightly before refrigerating to cool completely.

For the sandwich:
Heat a nonstick pan or griddle over medium-low heat.

Butter the insides of the sliced croissants and toast, buttered side down, until slightly browned.

To assemble the sandwich, place a heaping tablespoon of blueberry-thyme compote on 1/2 of the croissant.

Top with sliced ham and 2 slices havarti cheese. Top with remaining croissant half. Serve immediately.
